4 C. chicken broth
2 C. your favorite chunky-style salsa
2 C. shredded or diced cooked chicken
1-2 t. cumin
1-2 t. cumin
1 can corn, drained
1 can black beans, drained
1 can fat-free refried beans
tortilla chips
grated cheddar or jack cheese
In a large pot, combine first 7 ingredients over medium high heat. Stir occasionally until blended and heated through. Lightly crush tortilla chips into a large soup bowl, top with cheese, and spoon soup over.

This is my FAVORITE Soup recipe in the world! It is easy - like a dump cake - only soup!! It is DELICIOUS!!!!!
ReplyDeleteI prefer a thicker base soup and not a broth base as I can't stand soggy chips/crackers or bread - this is absolutely perfect!!!
